In the busy center of Ho Chi Minh City, there is a familiar scene that has existed for many years: long lines of people patiently waiting in front of Huynh Hoa Banh Mi shop. From school children in uniforms, elderly locals, to foreign travelers carrying backpacks, everyone shares the same purpose – to taste one of Saigon’s most famous banh mi.

Huynh Hoa Banh Mi is not only well-known in Vietnam, but was also honored at the Flavors Awards 2024 with the title “Ideal Culinary Destination for Tourists.” More surprisingly, these banh mi are now transported by airplane to Hanoi. Each sandwich costs around 100,000 VND, yet they are still sold out.

Behind this success is not only great taste, but also the more than 35-year journey of the founder, Ms. Le Kim Hoa.

A Banh Mi with 18 Ingredients and Care in Every Detail

Few people know that each Huynh Hoa banh mi is made with 18 different ingredients. From smooth, rich pate, cold cuts, Vietnamese pork sausage, sausage, pickled vegetables, fresh herbs, to a special house sauce – all are carefully combined in the right proportion, creating a balanced taste of salty, sweet, sour, and spicy.

Huynh Hoa does not follow the trend of “fast food, fast making.” The shop keeps a traditional philosophy: ingredients must be fresh, preparation must be careful, and every step must be strictly controlled. This careful process makes the price higher than average, but in return, customers receive stable quality and a memorable experience.

From a Small Street Stall to the Dream of Keeping a Family Tradition

In the past, Ms. Hoa’s father owned a popular stall selling sesame cakes, fried dough sticks, and banh mi at Phu Dong roundabout. When he retired and handed the stall to his two older daughters, the way of doing business slowly changed. They stopped making food themselves and began selling ready-made products. Over time, customers became fewer, and the stall gradually lost its reputation.

After her father passed away, Ms. Hoa looked at the old baking tools placed quietly in a corner. She cleaned each plate and remembered the sound of cutting crispy bread, the smell of rich pate spread on hot bread. These memories made her realize she had to do something to keep the soul of her family’s traditional craft.

100,000 VND in Capital and Nights of Selling Until 2 a.m.

Ms. Hoa borrowed money from many people to collect 100,000 VND as starting capital to open a banh mi cart. Including interest, the total was 120,000 VND, and luckily she was allowed to pay in installments. However, making a living was not easy.

Some days she sold well, but other days she sold very little. Even on rainy and windy days, she tried to continue working. She often sold until 2 a.m. If there was leftover bread or ingredients, she had to throw them away. Her small capital slowly decreased. At one difficult time, she even sold her most valuable possession – a Honda 78 motorbike – to survive. This was the moment when she put everything into her choice. And it was this brave decision that led to the first Huynh Hoa banh mi being born.

A Turning Point at 26 Le Thi Rieng Street

In 2008, Ho Chi Minh City strengthened regulations and no longer allowed street vending. Ms. Hoa had to find a fixed location. While talking with a stranger, she was advised to try Le Thi Rieng Street. By coincidence, a shop at 26 Le Thi Rieng Street had just become available. She decided to move there immediately, without looking for any other place.

Moving from a small cart to a fixed shop was a big change. Old customers were not used to it, and new customers did not know the shop yet. Business was slow at first, and Ms. Hoa felt discouraged. She let employees handle the shop while she stepped back.

One night, she accidentally heard someone passing by say: “Huynh Hoa is not good anymore. Their banh mi is boring now.” That sentence became a wake-up call. The next day, she renovated the shop and returned to sell directly every day. After only one month, the number of customers increased clearly. The shop became busy again. From renting the place, she gradually saved money to buy the house, turning it into a familiar address for customers for many years.

From “Being Your Own Boss” to “Leading Many People”

As the shop grew, Ms. Hoa faced new challenges. However, because she had done every step herself, she had a big advantage in quality control. Just by tasting, she could know what ingredient was missing, whether the pickles were balanced, or if the pate was rich enough.

Key managers at Huynh Hoa are skilled workers who were promoted by her. She later supported them to study more so they could take on higher positions.

Why Can Huynh Hoa Banh Mi Fly to Hanoi and Still Be Popular?

The fact that a Saigon banh mi is flown to Hanoi and sold for around 100,000 VND is not just interesting. It shows the real value of the Huynh Hoa brand.

First, it is the stable taste over many years. While many food shops change their recipes to follow trends, Huynh Hoa stays loyal to its traditional way. The taste today is almost the same as decades ago. Customers always find the familiar flavor when they return. This consistency builds trust – the most important factor in the food business.

Second, it is the high-quality ingredients and large number of components. A Huynh Hoa banh mi is not just bread with a few slices of meat. It is a combination of 13 carefully selected and handmade ingredients. The filling is generous, the pate is rich, the meat is fragrant, the pickles are balanced, and the vegetables are fresh. Each banh mi becomes a “small meal,” not just a snack.

Third, it is the reputation of a brand with more than 35 years of history. Huynh Hoa did not become famous because of advertising tricks, but through word of mouth from customers across generations. When a brand lasts for decades, its name itself becomes a guarantee of quality.

Finally, the inspiring story behind each banh mi adds more value. The journey from a small cart with only 100,000 VND in capital to one of Saigon’s most famous banh mi shops makes many people feel that they are not only buying a sandwich, but also supporting a dream and the effort to preserve a traditional craft.

All of these factors – taste, quality, reputation, and story – help Huynh Hoa banh mi cross geographic borders, fly to Hanoi, and still be warmly welcomed, even with a price that is higher than average.

Not Just a Banh Mi, but a Slice of Saigon

Huynh Hoa banh mi is not simply a dish. It is a story of perseverance, passion, and the desire to protect traditional values in a modern world.

In a Saigon that changes every day, there is still a banh mi that keeps its old spirit – hot, full, and sincere – making people willing to line up, willing to wait, and willing to love it for many years.
